If you don't use Wake-Up Slap, Skill Link is superior. If you do, then it's a tougher call, and depends on how worried you are about steels. Keep in mind also that Skill Link is currently unreleased, so you'll have to use Technician if you want to play outside of the Dream World tier.
Choice Band is just as good for it as it is for any other physical sweeper.
Why not Zen Headbutt? Is Psychic-type coverage that bad even with STAB?
Yes it is. Ice Punch is more useful as it allows you to take on those pokemon that resist your primary STAB

Zen Headbutt still can't counter Machamp. Thunderpunch is good for combatting Gyarados, but I don't see too many Gyara running around these days. It's a matter of what you encounter most
If your team focuses on setting up quickly, screens would be fine. I can't tell you any specific attacking types to have, though. Just make sure you have good coverage.
With team preview the idea of an absolute lead is kind of out the window, but I could see that that set would be somewhat useful. Although it allows opposing Steel types to set up on you all day (such as Skarmory's Spikes, Ferrothorn's Spikes/Leech Seed).
You could try using Earthquake over Bullet Punch although that doesn't really help you against Skarmory or Ferrothorn.

THis depends on your team. If you require a Pokemon to keep U-turning and keeping the pressure on, go with Scizor, if you want a solid hard-hitter, go with Metagross.
