Monster Hunter: A sort of different kind of game in this genre, instead of having monsters fight monsters its you fighting the monsters. You also don't really tame them but rather kill and sell & scavenge their bodies to become stronger and get better equipment so you can hunt bigger and stronger monsters. It's also a multiplayer game, primarily one infact. It has little story but that's because you're meant to be having fun with other players taking down giant fierce beasts. It gives players a more personal feel since it's their character fighting and growing richer and more powerful.
You said so yourself, Monster Hunter isn't really at all like Pokemon. They're not in any direct competition like Digimon was with Pokemon due to fulfilling a different gaming niche.
And let us not forget the fallen knock-offs, like Monster Rancher, Dinosaur King, and Medabots or others in the mon genre like Ni no kuni, Puzzle & Dragons, Tales of Symphonia 2, Kingdom Hearts Dream Drop Distance, Fossil Fighters, and many more.
Balloon Spam: The Game's narrative (which I will not go into because I will give you all headaches) made it quite obvious that the Mon aspect was probably going to be a one-time thing.

Unfortunately those two aspects are endemic to that series and had nothing to do with the 'mons, but that is neither here nor there.
You do bring up a point that "X Game: Pokemon Edition" is starting to become a trend, with a lot of games doing one weird knock-off pokemon version and then never doing that again.
Kingdomhearts DDD, Final Fantasy XIII-2, Tales of Symphonia 2, and others are all examples of this. They be so jelly.

...Anyway, I really disliked the Unova Elite 4. Not that I liked any Elite 4 character, but Unova's just felt especially awkward. Grimsley was okay, I guess, Shauntal was an infuriating fight by virtue of type combinations, Catalin was a poor continuity nod to an unneeded BF character, and Marshall was... boring. Were these supposed to be the one-dimensional filler characters that brought out the contrast in Alder, N, and Ghetsis?

Let's be honest, many Elite Four have never been that well established. Most if not all of them do appear at the very end of the game which makes you wonder "oh, where were you guys when I was fighting off the villainous team?".
As for why people may like the Unova Elite 4 better, could have to do with a few things:
1. They were the first Elite Four you can fight in any order you want. 2. They're also the first to present a player with a sort of show coming up to them where as before they were just some person standing in a middle of a room. 3. They have more definite themes to them than most Elite Four. Aside from Caitlin who's concept is a bit vague (I think she's suppose to be like a Sleeping Beauty princess?) I know from appearance, mannerisms, and dialogue that Grimsley is a gambler, Shauntel is a (ghost) writer, and Marshall is some kind of martial artist though his defining trait is that he's Alder's apprentice. Also due to fighting them in any order and just in general they have additional dialogue that expands a bit more on their characters. 4. The types they use sort of have a meshing theme to them. Dark, Ghost, Psychic, and Fighting all relate to one another being a weakness, resistance, or immunity. Also they do sort of represent the "black and white concept": Dark & Ghost are considered darker types while Psychic & Fighting are considered more lighter types.
I found them interesting, at least compared to many past Elite Four.
The male Aqua Grunt behind her also seems to agree.

And I don't think that's an unpopular opinion but rather something they were going for. An unpopular opinion would be you like ORAS Courtney over ORAS Shelly (or if you find RSE Shelly more attractive over ORAS Shelly). ORAS Shelly was kind of designed to be sort of a bombshell seductress, at least by her design. Like in the image above, why i she bending over like that? The reason is because by doing so it puts a bit more emphasis on her behind, as if her revealing clothes wasn't attention grabbing enough. ORAS Courtney is completely covered up and she meant to be emotionless (thus why in the game she talks like a robot). It's pretty much playing up to the opposite aspects of Team Aqua and Team Magma:
Archie is for Pokemon and is more emotional, Maxie is for people and is more logical.
Shelly is seductive and will flirt to get her way, Courtney is more robotic and prefers using logical reasoning.
Matt is muscular and is loyal to Archie, Tabitha is rotund and wants to usurp Maxie.

Ugh, they're sexualizing these cartoon characters now? I thought the whole idea of this series was to have games for kids that kept them interested when they got older with all these complex RPG stat mechanics. Now GF's basically admitting they can't keep up with today's youth.

RIGHT, I forgot that pretty much all Japanese media is geared towards all ages. You don't have promotional art for those bits, though... Much less 3D models

Speaking of which, I don't like how they've been cutting the Elite Four's pokemon in recent games from 5 to 4. While it made some sense in Black and White due to the entire Pokemon League being longer due to story (even if you could take a break in the middle and heal/switch), after that it's just lazy and making the game easier when this is supposed to be the "final boss challenge."
While I'm glad ORAS reversed this, I feel that was more duty to the old R/S/E games rather than reversing policies.

I think that's a fair and logical increase in difficulty. Also the last rival fight should also be 6 Pokemon, they're the rival afterall and suppose to be just as good as you.

I actually liked how Gen 6 had only 4 Pokemon in the E4's team. I thought depending on your team, just 4 already is a nightmare. I usually end up having a team with no Electric or Ground types, resulting in me struggling horribly with the Steel and Water E4 who I forgot their names and I feel horrible now. Water's Gyrados is a demon, and meanwhile having Steel's Probopass knowing Power Gem killed me when it came to using Delphox to try to sweep.
JUST ONCE I'd like a Champion that they didn't introduce you to earlier in the story.
And if they can't do that, they should AT LEAST make it the Professor.
I remember when I was watching my little sister slog through Pokemon X, and run into Diantha and Sycamore in Lumios. And I was thinking to myself "huh, looks like they're going to have a Professor Champion for once". Then I found out from osmosis that, of course, Diantha's the Champion. And the amount of character that person has makes me wonder why the heck they introduced you to her in the first place—unless, since you met her with Lysandre, that was to show that you wouldn't be getting any help fighting Team Flare.
I mean, at least every other Champion got somewhat involved against the bad guys. You don't even need to introduce her like this, since one of the Elite 4's an obvious TF goon. If we're heading in this direction, Can't we just ditch the obligatory story involvement and have a Pokemon Champion that's truly uninvolved?

... Mega Charizard Y and Mega Blaziken helped me out a lot. Actually I ended up not using Bisharp nor Trevenant, Mega Charizard Y + Drought + Solar Beam kind got me through Siebold without much of a hitch.

I'm pretty sure I made the mistake of thinking it would be fun to do Malva's Pyroar versus my own under leveled one, which ended up with her being KOed and poor under prepared me having no revives.

At this point I can actually get through really easily though, but it was the first time I'd ever made it to the E4 in a game. (I lost my Pearl cartridge at some point just before Palkia's battle, and I didn't have a 3DS yet so I just gave up on looking for it.)

Well, it doesn't actively happen. You just get a few extra points while training and beating Gym leaders.

When it comes to facing random AI trainers in the game (with the exception of the Battle Tower/Frontier/Subway/Maison), EVs and IVs are mostly pointless.
Also, here's a basic thing with EVs that a friend of mine used a very long time ago to help me:
You know how in Zelda you need four pieces of hearts to get another Heart Container? EVs are just like that. Every 4 EVs in a stat is 1 more point when it hits level 100. After that, just use Super Training as it becomes very straight forward after that.

For interesting trivia, Shin Megami Tensei/Persona WAS the first example of the "monster capturing" genre, so everything is technically descended from that.
