Ummmm... it's been quite a while since I've done walker abuse, but IIRC you can do something to change the nature, either "re-connect" and each time it advances the nature forward or something. If you ask in the RNG help thread I'm sure someone will know off hand.

Just pick any careful set that Altaria can get with those moves that you like the most. xD
