Trogdor: You are trying to modify the IVs and Nature. So it's hacking. Use Synchronize for the Natures, and just start the damn breeding for the IVs.

Never got this clarified.

So for example, say that I have one Pokemon Diamond game and 2 DSes (which I do, lol):
I play Diamond on DS #1, connect to wifi there, and get a FC.
I play the same Diamond on DS #2, and connect to wifi there. Do I get a new FC?
And what if I were to switch to DS #1 again and connect to wifi there?

You get a new FC if you connect to wifi in a different DS, yes.

Jirachi has better offensive and speed, but Bronzong has better defenses and Levitate, it depends on how are you planning to use it, if you want a tank, then jirachi should work fine, just beware earthquakes

I don't think you can, i checked the breeding section on serebii and
i think that you will have to go with Ice Fang
