Anyone think Defensive Gyarados is still viable in the metagame?
Yes, honestly I think it's more viable than an offensive set. There's just to much competition for set up offensive mons for Gyra to shine in that aspect.

I'mma big fan of the Sub Taunt sets.
I was thinking Waterfall, T-Wave, Dragon Tail, Filler + Intimidate and Impish. Maybe DD would serve as a beneficial addition to it.

You're actually rather wrong about this. Dd gyarados is perfectly fine considering it is one of the only mons in OU who get setup+intimidate which actually makes it easier to setup. only 3 pokemon with this combo come to mind. Mawhile, mence, and gyarados.
What gyarados has over other sweepers is that received a mega that helps it kill things that would hinder it's sweep. Mega gyarados after a dd kills things that originally check or could give it issues. Rotom's, scarfed gengar (yes this exist), gastrodon, multi-scale dragonite quite a few other pokemon.

I never actually said offense non bulky wasn't viable, just that I thought bulky or defensive was better and that offensive has a lot of competition.
Mega Gyarados isn't that great, it replaces it's alternate STAB from Bounce to Bite, it loses and immunity, it loses the intimidate you were heralding about earlier, it goes from resisting Uturn to being weak to it, it goes from resisting Aegis (intimidate plus resisting Iron head and sacred sword) to being weak to its coverage move. The best sets have been the bulkier sets, I don't see what changed that in Gen 6.
