I'm going to be breeding a Jolteon soon, Timid, most likely Choice Specs. By the looks of it though, I should be able to make a Timid Eevee that fits any of the common move sets.

My questions, though, are:

Hidden Power: Grass or Ice?

Are there any Egg Moves I should breed? Either for Jolteon or for the next point:

Is a Timid nature ideal for any of the other Eevee evolutions?

Ice for sure. A whole mess of Dragons like to switch into Jolteon. I wouldn't breed any egg moves for it. HP Ice, Discharge/Thunderbolt, SignalBeam, and Substitute are enough. I wouldn't use Choice Specs on Jolteon. It's too iffy since it's too easy to switch onto a Choice Jolteon. I would also go Modest because what other Pokemon is going to outrun Jolteon? Very few so Modest is more useful.

Espeons work well with a Timid nature, and I believe I've seen a Timid Glaceon set.

For the HP, I think it really depends on what you think you'll want to counter (this may depend on what makes up the rest of your team!).

Out of curiosity, how accurate is the information in the tier list? For example, there is absolutely no mention of Modest in any of the move sets for Jolteon.

It's accurate. Last time I used Jolteon and needed a build, I used Modest because they told me to use Modest and it made sense. They always change those articles (OU and a few UU, NUs are pretty much ignored) to keep them up-to-date with the Shoddy battles. Apparently, now the Jolteons are said to be Timid. It's probably a response to the changing metagame. Any works because WiFi is different than Shoddy. The teams on WiFi are more diverse and there's no specific set that's best.

Jolteon want Timid because it can outrun Base 120's and 125's as well as +1 Adamant Gyarados and atleast tie with other Base 130's like Aerodactyl. I don't think the increase in power is worth it. I think I usually prefered to use HP Grass for Swampert but it really depends on your team. You might as well breed Wish, Curse, Fake Tears, and Yawn onto Eevee because those are its only useful Egg moves and if you happen to get a good Bold one, you can still use it as a Vaporeon. (Also, there is a Jolteon with Wish in the analysis and there used to be a Sub Passing Jolteon with Yawn.)

Currently I only really play the 'actual game', as well as learning how to breed, so I am just working on breeding Pokemon I like =)

Approaching breeding without really knowing how competitive battling works aside from watching videos and such, is rather difficult. I am also looking at a Lucario, and there are so many viable sets =p
 
If I was to compete in the Battle Tower, and one of my Pokémon activate a consumable item like Focus Sash or White Herb, do you keep the item after the battle? If you do keep it after the battle, do you lose it after that series of battles?

You keep it. It gets put back on at the end of every battle just like Wi-Fi. I think the Battle Castle doesn't regenerate the items, if it even lets you take them in.

No and no. You get to keep the item no matter how many times you lose it in the battle tower, so equip as many one time use items as you wish.

In a bit of a stretch here, a friend of mine asks me to come up with a way of trading with yourself, if you only have one DS, wifi connection, no GTS and no Pal Park. Any ideas?

The only way I can think that you would be able to trade with yourself, is use an AR to put your Pokemon in a rom of DPPt/HGSS and trasfer it back. It'd probably just be easier for your friend to find someone trustworthy on Smogon to trade with.
 
So I just used an all water team in Platinum.. went to the Elite Four.. barely made it through them.. got to Cynthia.. failed. Barely made it through Lucian tbh.. [lucky]

So my water guys failed.. i really though i would be able to handle most and all types/combos.. but no.. water is just too defensive.

Anyone have any ideas for a new mono-team?
