Guess Bulbapedia is wrong about Knock Off countering FEAR then. So that just leaves Nidoqueen left.
Unfortunately, Double Kick doesn't break through a Sash either.
If all you need is to beat the three threats you mention, and don't care about how well you do against other things, you could use a Banette with Insomnia (immune to Spore) and (ghost-type) Curse (which destroys Baton Pass teams by putting them on a pretty fast clock); the ghost typing makes it immune to Endeavor. I don't suggest that this is a good strategy, though, as Banette is kind-of rubbish otherwise. Instead, it may work better to modify bits of your team to check the threats individually; the hail-FEAR strategy fails against ghosts, and (if they use Leftovers) Tyranitar, Hippowdon, and any Ice-type wall (because they'll either change the weather to something they can handle, or resist hail, and a Lv. 1 Pokémon won't be able to damage them faster than the Lefties recovery); you should have a status absorber to deal with Spore users among other things (anything that can pull off Rest/Sleep Talk on a defensive team, things with Insomnia or Vital Spirit, or on an offensive team, something fast with a Lum Berry); and things that shut down Baton Pass strategies include phazers (before the opponent uses Ingrain; some good phazers are Skarmory, Hippowdon, and Swampert), the move Haze itself (hardly anything good learns it, though), and Perish Song users (only used competitively by Celebi and Mismagius, as far as I know); in Ubers, you could also use Heart Swap Manaphy (which is also a great status absorber in the rain).

Is Ghost good offensive and/or defensive typing?
It's not bad defensively at all (some common ghost-type walls are Rotom-A, Dusknoir, and Spiritomb); it's particularly good defensively in Doubles (where Explosion is one of the more common moves used), and is used quite a bit even in singles (often to resist Normal-type attacks, such as the occasional Explosion or, on a stall team, Rapid Spin); note that most Pokémon that use Fighting-type attacks also have a reliable way to deal with Ghosts, so it's less good as a counter to those. However, you have to be careful of things like opposing Pursuits. Offensively, it's not the best but it's still quite good; Ghost-type sweepers will generally use their STAB (there are quite a lot of Psychic and Ghost-type Pokémon running around both OU and Ubers), and it has good coverage with Fighting. Overall, I wouldn't say it's perfect in either, but if you have a Pokémon that's Ghost-type and you want to use it for some other reason, don't feel bad about using it.

I'm basically trying to find a guide of shorthand used on this website. Apologies if there is one, and if there is, could you point me in the right direction.
Things like :
OU ?
UU ?
NFE ?
RMT (i worked this out as rate my team thread)
TR (trick room?)
Basically a list of team shorthands, and community shorthands would be ideal. Makes browsing the site, and understanding the threads much easier.
Try looking through
The Pokémon Dictionary and the
Introduction to Competitive Pokémon; most of the acronyms you don't understand are likely to be explained in one of those, including all the ones you asked about there.
