You save in the house (the one where you see it fly away upon leaving). You then reset, hit your seed, exit, 'talk' to it, find it, and capture it. Then check if it's what you wanted, else reset and make your next attempt.
If you mash A consistantly when 'talking' to it, then you can hope to get a somewhat consistant result. You control the PID the same way as with anything else (except you can't synch), i.e. view Chatot's summary screen while still in the house, but it might take a great deal of trial and error to get the nature (and possibly shininess) you want.
