Just for funsies, I'm not going to list any Nintendo titles in this.

Castlevania II: Simon's Quest Classic, catchy, Castlevania. What more can I say?
Touhou Shinreibyou (Ten Desires) Honestly, I could spend an entire fucking post talking about how amazing Touhou's music is (it's tempting, really) but I'll just leave it by saying Ten Desires easily has one of my favorite soundtracks of any game.
Rocket Knight Adventures Outlaw already posted the boss theme (which is my favorite track from the game) but I need to stress how great the music for this game is. This is the shit childhoods are made of.
Monster Hunter: Portable 3rd Amazing theme for an amazing fight. Much more satisfying experience than Lagiacrus for sure.
Mad World The game was kinda meh, but the soundtrack was top notch all around. And speaking of Platinum Games soundtracks...
Anarchy Reigns I challenge you to find me a single bad song in this game. Go ahead, I'll wait.
No More Heroes 2: Desperate Struggle Some songs are so memorable, they can take an otherwise forgettable boss and make them stick with you forever.
Persona 3 Some songs are so memorable, they can take generic enemy encounters and make th-BABY BABY BABY BABY BABY BABY BABY BABY
Muramasa: The Demon Blade This entire soundtrack is so chill. Great if you're into traditional Japanese tunes.
Super Meat Boy Danny Baranowski is a god and should be treated as such.
The Binding of Isaac No, seriously. He's awesome.
Mighty Switch Force I didn't expect the music from a downloadable 3DS title to be so good, but I'm sure glad I was wrong.

Some of my best memories were from Halo 1 and the music in particular really stands out. The themes are simple yet atmospheric and I really enjoy listening to them even on their own.

Ace Attorney, the music in these games is exhilarating, smooth and always fits the mood perfectly. As well as the vibrant characters themselves usually having brilliant themes but I won't list them all.

World of Goo is a beautifully crafted little indie game that's been graced with one of the most unexpectedly fabulous soundtracks I've ever encountered... I could list nearly half of the game's tracks, but the following are my personal favorites:

Xenoblade Chronicles also has a seriously impressive song collection full of heaps of epic, larger-than-life compositions mixed with softer emotive pieces throughout the entirety of the game's massive storyline. Refraining from dumping 10+ links here as well was difficult.
