I'm sure you can find flawless Mews everywhere on Smogon. Pidgeot can be IV bred with RNG if you learn it. If not, just look or ask around.

I haven't got a shiny ever since I caught a shiny Gastly by chance. I forgot to save because I was EV training a Gastly of my own and I think I messed up, and so I turned the game off (this was when I just learned how to EV train). I only get shinies via trading nowadays.

So you're going to RNG a Timid Latios. I'm not familiar with catching legendaries using RNG; I'm still in the process of learning how to IV breed with RNG.
I think I can check EVs without you having to trade. I KNOW I can check IVs that way; allow me to try EVs though.
