Sash would disappear (not permanently, unless outside battle tower or not on a wifi battle), so it won't work again.

IVs are set in stone from the moment you encounter a Pokemon.

Here is a good calculator for them.

EV training means pretty much that if you fight a bunch of Zubats or another Pokemon whose highest stat is speed, you'll get extra speed point when leveling. Same goes for other stats.

EV training is actually very complicated. I doubt I could cover it for ya completely.

It's just a general trend that it gives out it's highest stat. It dosn't always work that way.
