also a shame that there's basically no point in having amarant in your team once you can because they give him fuck all to do with anything and no real character development

Actually the game did a pretty decent job of explaining Amarant's character.
Beginning
Amarant started out (in the story) as a man who literally lived only for his pride. His whole life was just to prove his self worth through the best way he could, fighting. As a guard in Trino he received the closest thing to losing by some kid. He was jaded by some punk who didn't even want to fight him. Obviously this severely hurt his precious pride so from then on he vowed to reclaim it one way or another, through a fight to the death. He didn't even care that he was accused of a crime he didn't commit.
Story
Finally! At long last Amarant had his chance to get his revenge on that brat. By now Zidane and his band became pretty famous and he was given the job of retrieving the princess, and putting a stop to the group, permanently. Soon Zidane and Amarant became locked in combat but only after he saved a them, but he only did so for him to truly beat Zidane with no strings attached just to prove he's better than him. To his horror he lost. His pride was smashed and his reason for living gone and to make things worse his opponent didn't even want to finish him. To Amarant this was a huge shock, being the conceited jerk that he was he couldn't see the world through the eyes of others. Seeing that he still had much to learn (No one is that thick headed) he agreed to join there group after he was offered to join during his second confrontation with them.
The Lesson
With his patience reaching its limits, Amarant decided to leave the group at Ipsen castle to finally beat Zidane through the one way he could, his ideals. If Amarant could prove that his way of thinking was superior to Zidane, he could finally reclaim his pride. Having beaten Zidane to his goal, Amarant finally "won". Seeing no reason to stick around he decided to leave for good. Sadly he fell into a pit and was trapped, thinking that since he lived for himself he was destined to die for himself. Then he received the greatest shock of his life. Zidane came back for him. Amarant could not understand, he believed his thought process was flawless. Not only did Zidane prove his point he taught Amarant the value in living for things other than himself. Amarant finally learned the preciousness of life and gained the drive to live.
Conclusion: Amarant went from being the punk that lived for his pride to the man that saw the world through the eyes of himself and others. Amarant is obviously not just a joke character and is one of the deepest character in the entire series. The only unclear thing about him is how he came to his old self but that just about it.
