There are massive, obvious flaws to Final Fantasy XIII, but it's pretty much the ultimate "aesthetic" experience on the PS3. It's probably worth it even if only to test the sheer processing power of the console.
As I am a philistine, I neglected to start AC from the beginning, but I've played both AC2 and ACB, and they're both awesome games and would make a great addition to your library. At this point I can't bring myself to play AC1, as it is likely worse than the titles that came after it.I found Assassin's Creed to be way too easy, linear and the best word I could use to describe the whole experience is 'shallow.' Ubisoft have done nothing to change my opinion by announcing AC3 a matter of months after the release of Brotherhood. I understand that it's quite a popular franchise, but I wouldn't call it essential by any means especially when there's quite a few other third person action games that blow it out of the water (Uncharted 2, Batman AA, God of War).
Just my two pence, a friend of mine loves it though so ehhhh.
edit: agreeing with Az though in that you should always start every franchise from the beginning whenever it's convenient to do so!
double edit: should probably point out i've only played assassin's creed 2 (hypocritically enough considering my first edit ^_^) so i'm basing my opinion solely on that.
Do Uncharted before Uncharted 2 so you can get more invested in the characters.
