CM Fini runs CM / Scald / Draining Kiss and then either Taunt or Substitute in the last slot always, with Taunt being more commonfor calm mind fini, is it better to run knock off, shadow ball, or taunt? I have other sweepers that work well against stall, but nothing that comes remotely close to beating a buzzwhole g-king core.
Taunt is generally the best option as the fourth move on CM Tapu Fini (alongside Calm Mind, Scald, and Draining Kiss), as it prevents Toxapex from using Haze to remove your Calm Mind boosts, while also preventing slower Pokemon from using status-inflicting moves like Toxic, recovery moves, and Teleport while facing Tapu Fini. I pretty much just started playing but I want to make a sorta competitive team at least eventually. My current team is random ones I like but I'm reading more about OU and viable comps. Also, I don't mind evolved forms of the original ones e.g. Blissey/Magnezone.

I know certain phys def sets utilize flamethrower, but I need to do enough damage to corv to make it uncomfortable.

At this point you’re compromising almost all of Garchomp’s other niches while banking on hitting twice, SR being up prior to switch-in somehow, and Corviknight not being fully SDef. It is never worth it. The best way to pressure Corviknight with Garchomp is running Swords Dance and Leftovers, ideally with Fire Fang, as Body Press hardly chips you as you set-up all over it.If you want to pressure metal birb with fire blast Chomp, then you need 184 SpA evs to two shot it after stealth rock. You can then max out hp and dump the rest into defense. Note that you will need sr chip on metal birb otherwise fire blast won't two shot

Most of the time it is +Def with a decent amount of SDef for things like Specs Lele, Specs Pult, Heat Wave TornT, etc.Now that you mention it, does Corviknight use a lot of spdef now? Didn't it go like 88 or 92 spdef evs? What changed that its running fully spdef now?
