You are only opening the Happiness checker ONCE right?

Id just try doing a non shiny seed and doing only like 3 taps to see if your just counting incorrectly :(

Are you entering the game WITH the Happiness checker APP open? (Like is it the app you have showing AS SOON as you enter the game?)

May I suggest just doing one that isnt shiny?
Like dont click "shiny only" and use one of the seeds that only requires like 3 taps
And just see if it works and maybe you ARE doing the taps wrong...
Other then that...
Are you sure you have 6 Pokemon in your party when doing the taps?
Are your parents international?
Window computer ones :)
Its the one where if you put the stylus on ONE of the pokemon a heart comes up
And the one where all the pokemon in your party are roaming around on the bottom screen

Are you in an area with weather conditions?
Are you sure you dont have international parents?
Are you making sure to only go past the Hapiness APP once?
All of those above will mess up the IRNG.
And then theres the obvious one where you just messed up the amount of taps =/
